Grilled eggplant rolls with feta, rucola and Jalfrezi

You will need
1 large eggplant
70 g feta
1 pack Jalfrezi
1 small handful rucola
8 cocktail sticks
How it's made!
Wash the eggplant and cut into thin slices with a large kitchen knife. Cook on both sides in a griddle pan.
Lay out the thin slices with the narrow ends facing you and put a teaspoon of Jalfrezi at the start of each strip. Crumble the feta over this and add a little rucola (as in the photo). Roll up the slices and hold them together with cocktail sticks.
Serve as party snacks on a large platter or wooden serving board.
