Oven-baked sweet potato fries with Barbecue
Fries are generally not considered very healthy as they are normally deep-fried. But have you ever tried making them yourself in the oven instead of the fryer? At Sophie's Garden we're in love with the subtle, sweet flavour of sweet potatoes and our favourite way to enjoy them is in the form of fries. Serve them along with boiled or steamed vegetables and a veggie burger or falafel balls. Or serve a big platter of them as a snack to go with drinks. Serve with a bowl of Barbecue!
You will need
2 sweet potatoes (approx. 700 g)
1 tsp (smoked) paprika powder
1 pack Barbecue
How it's made!
Preheat your oven to 180 degrees Celsius and line a baking tray with baking paper.
Wash the sweet potatoes and cut them into fries. No need to peel them.
Place the fries into a bowl and add a glug of olive oil. Then add the paprika and salt to taste before tossing the fries to coat them in the seasoning.
Lay the fries out, evenly spaced, on the baking tray and bake in the oven for 30 minutes or until the fries have browned and become a little crispy.
Serve the fries on a large plate with a bowl of Barbecue.
