Stuffed courgettes with minced meat and Grilled Red Pepper
For many families the evening meal is an opportunity to gather around the table and chat about their day. To spend a little time together. A lot of people find they don't have the time to put a healthy meal on the table, but it doesn't have to take a lot of time at all! With a little inspiration from Sophie's garden, two big juicy courgettes and some fresh basil, you'll be able to conjure up a healthy and delicious meal in no time. The Grilled Red Pepper Hummus is what really brings this recipe together.
Serving suggestion: prepare a simple green salad to go with it, using different kind of leaves, cubed apple, roughly chapped walnuts and a dressing made with olive oil and apple cider vinegar.
You will need
175 g vegan mince
1 pack Grilled Red Pepper Hummus
100 g rucola
1 handful fresh basil
How it's made!
Preheat your oven to 180 degrees Celsius and line a baking tray with baking paper.
Wash the courgettes and cut them in half lengthways. Remove the seeds with a spoon. Lay the courgettes on the baking tray and brush them with olive oil. Season to taste with pepper and salt. Bake the courgettes in the oven for 15 minutes.
Remove the courgettes and spread about 1 tablespoon of Grilled Red Pepper Hummus into the scooped-out part of each courgette. Then distribute the vegetarian mince between the two courgettes and cook for a further five minutes in the oven.
Garnish the courgettes with rucola and some fresh basil leaves.
